Snoek (‘Thyrsites atun’) – or Cape Snoek – is found in the seas of the Southern Hemisphere and is a major cultural and culinary staple in South Africa, particularly across the Western Cape. During the Cape’s winter months (April-Sept) they move in large quantities from Cape Town all the way up the west coast, providing welcome income and critical food security during winter for the West Coast fisher communities registered in the ABALOBI programme.

Known for its distinctively robust ocean flavour, firm texture, and high oil content rich in Omega-3 fatty acids, it is the quintessential ‘braai’ fish. This snoek is supplied blast frozen, mild cured and butterflied, with the head and tail removed for your convenience.

Braai like a Chef at Home

Quick and Easy top tip for Braai’ed Snoek: All you need is your braai, a greased braai grid, your Snoek and these five ‘golden’ ingredients: 2 tablespoons smooth apricot jam, 2 tablespoons garlic butter (or normal butter), 1 teaspoon smoked paprika , 1 tablespoon fresh thyme, juice of one lemon (and salt and pepper, to taste).

Throw the five ingredients into a pan, stir and gently heat. Place the snoek in your greased braai grid and onto the braai – turn it every 2-3 minutes, smearing it with your sauce each time. The snoek should be ready after 12 – 15 minutes. The skin side may be slightly crispy while the flesh side has acquired a lovely golden colour. Enjoy!
